It's a Wusthof Classic, so it's got all the weight, balance, comfort and precision sharpness of the great German line. This is a great choice for all amateur & aspiring chefs, and many professionals.

The purpose of this review is to urge any shopper investing in a Wusthof bread knife to go for the full 10" length -- it makes a positive difference in leverage as you slice, and easily clears the diameter of virtually any boule, ciabatta, and other artisan loaves. The same principle applies to roasts and other meats, if you use your serrated knives for carving.

The length doesn't diminish anyone's ability to slice tomatoes, panini or any other foods, either. If you're going to spend $100+ on a quality bread knife, make your money go further with the 10" model.

Smaller Size is Perfect Fit4
After reading some un-favorable reviews, I was a little hesitant to purchase this item. My need for knife protection, in a drawer that I wasn't ready to give up half the space to one of the larger trays on the market to, nudged me in the right direction. I got just what I needed with this knife storage tray; safe storage for my good knives and 3/4 of my drawer still there for the rest of my utensils.

I've had one of these in constant use for four years now and it fulfills its reason for being admirably. It is totally utilitarian and keeps my valued, Wusthof, Global and Henckels, knives organized, out of sight,protected and instantly accessable without taking up the whole drawer or using up valuable counter space as larger 'made mostly for show' blocks would. If you're looking for something simple and in its own way elegant this should serve you well for a long time. If you have more knives than this will hold or if you have lots of counter space to waste get something larger. That's just my opinion. I could be wrong.

Great tool for the kitchen5
It does a very good job of sharpening my knives when I'm prepping or carving. I needed something that was handy and efficient. It sets up well with good balance and does the job better than most of my former sharpeners. A nice edge on the blade with a minimum of effort. A nice space-saver4
We had two knife blocks on the counter, with lots of dull knives in them. We bought two good Global knives, and sent the rest packing to the drawer or the summer cottage. Now we have more counter space and sharp knives. The reason I gave this a 4 instead of a 5 is that it doesn't fit under our cabinets in their recommended installation. Our cabinets are 12 inches (30 cm) deep, and when I installed the block as recommended, it would bump against the wall when I tried to rotate it. So I had to move it forward about 1 inch (2-3 cm). If your cabinets are 13 inches (33 cm) or deeper, you should be okay. Also, the template was slightly off on one of the holes, so check the template against the pilot holes on the block, and modify the template before you mark the cabinet for drilling.


great niche product4
For those of you who have huge kitchens, stop reading now. For those like me, for whom counter space is at a premium, this is a great product. Fits nicely under the cabinet, although you need to think before you blindly follow the template. If your cabinets are 12" deep cut about 1" off the front of the template orthe block will bind against the wall as it turns. Slots fit my knives and steel perfectly. Really glad I got this product.

Incredible, with the right technique5
If, like some pros, you like to grip the top of the blade between your thumb and index finger, forward of the bolster, and wrap the rest of your fingers around the handle, this knife is hard to beat. Such a grip is said to give better control, straighter cuts, and narrower slices than wrapping all fingers around the handle allows.

Yesterday I took a knife-handling techniques course offered by a Wusthof rep at a local shop and was amazed by how quickly this knife turned carrots, celery, and nearly anything else into neat slices and chunks. Using the grip described above, one merely rolls the knife back onto the item being cut, lifts the back only, and repeats, sliding the food into the knife. The front of the blade merely rolls and slides on the cutting board, and is never lifted. (Compared to this, the instructor said my lift-and-chop technique was fairly effective, but abusive! *L*) With this knife, you could cut a carrot or celery into neat, thin little slices in less time than it takes to lift the lid off your food processor and get ready to clean it.

I've got other good knives - prior to this knife, I already owned Henckels 4-star 6" chef's and fillet knives, a Henckels Pro-S 3" paring knife, and a Wusthof hollow-edge santoku (another awesome tool). The Henckels knives are excellent quality, but do not lend themselves to the forward grip; I tried it with my Henckels chef's knife and found that the forged bolster felt sharp-edged when I gripped the blade this way. Make no mistake - the Henckels is an excellent knife and works well, albeit with slightly less control, when all fingers are wrapped around the handle. The Wusthoff knife has a shallower transition fillet from blade to bolster and lends itself to either grip. I'd chosen the 6" Henckels because it felt well-balanced gripping the handle alone, while the 8" seemed heavier and less agile, but with the proper grip the 8" Wusthof Classic is balanced just right. The Wusthof Grand Prix, like the Henckels, tends to encourage an all-fingers-on-handle grip, though the bolster region may be more finger-friendly. I used to look longingly at Grand Prix knives, but last night's class sold me on the benefits of the Classic handle.

Needless to say, after giving it such a thorough tryout I took this knife home with me!

the best tool of the trade5
My mom, browsing my Amazon wishlist one day, saw this listed there. She emailed me immediately to ask why I would ever want a knife that is that expensive. Aren't the knives that she gave me as a housewarming gift good enough? They are dishwasher-safe and have a lifetime warranty, she reminded me.

I had to explain that while the knives she gave me were nice, they don't even compare to my Wustofs. My Wustof knives retain an amazing sharpness (even when I'm a little lazy about sharpening them). Their balance is unparalleled. The handle fits my hand perfectly. The knives that she sent me always feel dull in comparision, and the handle is simply uncomfortable.

I consider a good cook's knife to be essential for anyone who cooks. The question of which cook's knife to buy depends on the person who will be using it. There are two different questions: which model to purchase, and which length to purchase.

There are two main knife manufacturers: Wustof and Henckels. I think that Wustof knives are better made. However, some people prefer the handles on the Henckels. The Henckels handle is extremely uncomfortable for me, so I don't even consider them.

The second question is that of length. If you are taller, you will want a longer knife. Shorter people will want a shorter knife. I stand at 5'7" (170cm), and find that the 8" knife is most comfortable for slicing and chopping. My best friend is about an inch taller than me and also prefers this knife. A friend who is a couple of inches shorter than me prefers the 6" cook's knife.

If you have never purchased high-quality knives before, I would recommend that you go to a traditional store and try them out first. You want to see if the handle is comfortable and if the balance is right for you. Then come back here and order it -- the Amazon price is much better than that found in any kitchen speciality or upscale department store.

Also, if you have never purchased high-quality knives before, I would recommend two other purchases: a knife holder of some sort and a sharpening steel. The former, which doesn't need to be very expensive at all (my best friend has one that cost him less a dollar; it is simply a plastic tray with slits for holding the blades), keeps the blade from getting nicked while it's sitting in your drawer. The latter keeps the blade nice and sharp. You should sharpen your knives every time you use them. This isn't very difficult, nor is it very time-consuming, but it keeps your knives in perfect condition.

I am extremely happy with my purchase. I am slowly growing my knife collection. You will always find one of these knives on my wishlist. Even my mother has come around -- after experiencing these knives herself, she bought one for herself, and sent me the 6" cleaver as a birthday gift!

Size matters5
The right chef's knife can change prep time from a chore to a joy: mincing herbs, chopping veggies, opening squash and melons, even carving meat in a pinch. Wusthof makes some of the best - forged of high carbon stainless to keep an edge without being fragile, fully tanged and bolstered for heft and balance, with a comfortable, ergonomically-correct handle that can stand up to water and wear. You will use this for a lifetime.

SO: DON'T buy the five-inch because it's the cheapest one in the line. A chef's knife that's comfortable in the hand is a perfect tool. A knife that's too small is not worth the money. Anyone can use a five-inch knife for occasional fine mincing, but for chopping and carving, the five-inch is about right balance for a petite woman or very small man. Measure your chopping hand from the base of the thumb to the end of the pinkie - if that length is between five and six inches, this is your knife. If not, get a bigger one.

The kitchen workhorse5
This knife is good for everything from mincing herbs to slicing fruit to filleting small fish - it even makes a pretty good steak knife. I finally broke down and bought a second one, so my mate and I can cook together without fighting over it.

Like all the knives in the Wusthof Classic line, this knife is fully tanged and bolstered. The tang extends into the handle and offsets the weight of the blade, and the bolster sits on your index finger to provide the fulcrum point. The result is a knife that is remarkably responsive and balanced. Some reviewers prefer the larger utility knife to this 3.5 inch parer. This knife is lighter and shorter, and therefore provides a balance point that is more comfortable for a smaller hand. (Over the lifetime of the knife, the full tang will also strengthen the handle, though, unless you use it for a screwdriver, no steel soft enough to sharpen will ever "snap").

If you want the full arsenal of Wusthof prep knives, get the bird's-beak parer for digging the eyes out of potatoes and the stems out of peppers, get the serrated utility knife for slicing citrus and tomatos, get the trimming knife for cutting off stems and boo-boos, and get the utility or boning knife for for slicing and meat prep. But if you just want to buy one, get this one.

Buy one of these and never need another5
I strongly advise people to get GOOD knives. You don't end up with a drawer of junk, and you will grab for this one probably more than any other in the kitchen. This is my workhorse, and I love Wusthof knives. I've had a set for 20 years, and only replaced my paring knife because it was missing from my set after a move. I do everything with this, peel vegetables, cut dice, slice or dice onions.

A superb knife5
I received this paring knife (included in the course fee) when I took a Wusthof knife skills course at a local shop. It's everything a knife should be - sharp, solid, well-balanced, and a comfortable fit in the hand. Wusthof got the proportions of the classic-style handle about right; not too fine, not too chunky... just right for comfort and control. After the course I gave it to my mother, who was surprised at its sharpness. (I already owned a Henckels Pro-S 3" paring knife, which has a slightly longer handle... IMO the two knives are similar in quality.)

This is also the knife that inspired a friend who finally bought one to exclaim, "I'm surprised you didn't say, 'You call that a knife????? THIS is a knife!' when you were using my (old, stamped, serrated) knives!" She now understands my addiction to forged German steel.

As always, it's best to try several knives in person and see how they fit your hand before buying, but it would be hard to go wrong with this one.
