It's a Wusthof Classic, so it's got all the weight, balance, comfort and precision sharpness of the great German line. This is a great choice for all amateur & aspiring chefs, and many professionals.

The purpose of this review is to urge any shopper investing in a Wusthof bread knife to go for the full 10" length -- it makes a positive difference in leverage as you slice, and easily clears the diameter of virtually any boule, ciabatta, and other artisan loaves. The same principle applies to roasts and other meats, if you use your serrated knives for carving.

The length doesn't diminish anyone's ability to slice tomatoes, panini or any other foods, either. If you're going to spend $100+ on a quality bread knife, make your money go further with the 10" model.

Perfect tool for imperfect hands5
I have hand contractures from scleroderma and knew I needed better knives the day one went flying out of my hand while preparing dinner and nearly impaled the cat! The soft, built-up handles are all I can use safely - my fingers get numb from cold or wet from prepping but can still grip these handles. One disappointment is rust on the blades from putting them in the dishwasher (per OXO customer service, they should be hand-washed) but the marks are limited and all still sharpen and work fine.

The Oxo Good Grips Professional 4-Inch Paring Knife Is one fine knife. When you pick it up you can tell that it has a full tank because the balance is great. I have a lot of knives that have a soft padded grip but this one is by far the most comfortable. Good quality at a great price. I love it!

- the twin select are nice sharp knives
- it is a bread knive, you don't use it so often like a chef knive!
- the handling is fine
- it's cheap

I own 2 twin selects and 4 4 stars. And must say the handling of fourstar is better and you want to have the filet knive or chefs knive from this series, or better some japanese knieve ( way sharper, but hard to maintain, I'm lazy), but for cutting bread, go with this one, the handling is not so important for cutting bread, and it does'nt squeeze my ciabatta or french bread!

Great knife... bad product description4
I bought this knife instead of the other Victorinox 8" chef's knife (Victorinox 8-Inch Chef's Knife, Black Fibrox Handle) because this one is advertised in the Amazon product description as being a forged knife, and it's not (Same with the 7" granton-edge santoku advertised as 125th anniversary- buy the regular one!). The linked knife is the exact same (except for the special-edition "jubilee etching" on this one) knife, but cheaper right now. Go by the description of the other knife and buy whichever one is cheaper. It is an awesome knife though! The weight is great and it feels very balanced, the blade is very straight and high-quality. Super sharp right out of the packaging. Some people complain about that the fibrox handles look or feel cheap, of course they're not the most expensive looking but they don't look cheap to me. I have seen and felt much lower quality handles as well as more expensive, high quality handles and I have no problem with fibrox, I like it a lot actually. This knife is 2" wide at the base so make sure you have a long slot for it in your knife block. So the only reason I gave this knife 4 instead of 5 stars is for the misleading product description, which thinking back is probably my fault for not realizing right away that Victorinox wouldn't put the fibrox handle on a forged knife, but oh well, I guess I'm out 5 bucks but this knife is worth it.

The best chefs knife!5
I bought three Victorinox knives based on a recommendation from "Cooks Illustrated" magazine. I am so pleased! I got the 3" and 4" utility knives plus the chefs knife. All three are the best of their kind I have ever used, and I have always considered myself a bit of a knife snob. The polypropylene handles are very comfortable and non-slip, and the blades are just right. They are really sharp and they stay sharp. The chefs knife is perfectly balanced and such a pleasure to use. And the best part of all, they are so affordable. You deserve these knives!

Truly "The Cutting Edge"5
WOW! This is my first Kyocera - but it won't be the last. I just got it today and put it through it's paces.........a very soft tomato, went right through it, crisp celery, neat and clean, no strings, pared a tater in nothing flat. By comparison, I received a less expensive ceramic knife set for Christmas..........not nearly as sharp as the Kyocera. Can't wait to get a few more. Highly recommend this brand - no kitchen should be without at least one!

This knife is insanely awesome.

I am not a professional chef, I'm just a guy that watches food network and tries everything. I have a fair collection of kitchen tools (a 7" Shun/Ken Onion knife, a wustof [however its spelled]), and I do like to cook.

This knife is insanely sharp. When I first got it, I was messing around with an onion to see how thin I could slice it and it was so easy. Its inert - so theres no metal taste, and cake to clean. I've treated it well, and only used it for slicing/cutting.

You're not supposed to smash stuff with it, or use too much force. While I'm no expert, I've always understood that if you're using a knife that requires a crapload of force, you probably need to get it sharpened or get a new knife. I suspect the reviews regarding the chipping/breaking of these ceramic knives are probably due to heavy force use - and ceramic or not, I dont think a 3" pairing knife is the right tool for such a job.

While I can't say that I use this knife 24x7, but it is definitely a great compliment to the other knives/tools/items in my kitchen - and if you've got a knife block that you've added items to, you'll find this is an excellent addition for the money.

Sharp knife4
These ceramic knives are fabulous - sharp, light, and durable. The only problem with the paring knife is that it is so small and light, it's easy to forget how sharp it is and cut yourself (voice of experience). Unbeatable for cutting soft vegetables, such as tomatoes.

Quick and Handy For Most Knife Blades4
No one angle is ideal for all blades and all types of work, but this little sharpener delivers a good edge suitable for most work. For a really fine edge, I still prefer the traditional flat stones as I have more individualized control of the angle I'm sharpening at.

Despite that preference, I found the bevel created by this sharpener excellent for plain edge kitchen knives and very good for most other knives. This tool does the job quickly and efficiently. I had a collection of dull kitchen knives in a variety if different steel types and in the time it normally takes to sharpen two blades on my flat stones, I had them all sharpened. It also did a great job on a machete I use for garden work.

Using the device is simplicity itself. Stand the sharpener on edge and pull the blade through the Coarse side five to six times. Be carful when the blade come out of the guide not to drop the blade on your exposed fingers! Repeat the process if not satisfied with the edge, When you have a nice edge, flip the sharpener over and draw the blade through the Fine slot another five or six strokes. That's it! For really large blades, clamp the sharpener in a vise and draw the blade through. This minimizes the chances of cutting yourself.

Overall 3½ out of 5 and I'll give an extra half point for simplicity and ease of use.

Smith's 2-step sharpener3
I purchased this sharpener in the sporting goods department at Wal-Mart for $2.56. It is convenient and does a very good job at sharpening fine-edge knives.

Puts a Sharp Edge on Any BLade5
This product will put a quick edge on any knife, large or small. Simply draw the angled (paired) sharpening stones over your blade, and presto - you have an edge, and a pretty good one too. Best of all, the sharpener is very portable, weighs less than nothing, and fits into backpacks, fishing tackle boxes, hunting fanny pack, etc. with no added weight or bulk.

The edge that this sharpener puts on a blade is a great starting point for further honing of the blade to razor sharpness if desired.

I have several of these sharpeners. The only drawback is that the sharpening stones wear out after perhaps 6 - 10 sharpenings. But under 5 bucks a unit, this is a bargain.

Despite its name, this tool doesn't truly sharpen a knife. It's an alternative to a knife, or "butcher," steel. Like a steel, it performs the vital task of realigning, or "resetting," a knife's edge, which bends this way and that when contacting a cutting surface or other hard object. Because it employs steel and ceramic wheels to do the work on a knife's edge, it can grind a bit of steel off the blade. But that's more a polishing, or honing, than an actual sharpening. Simple and effective5
I tried this sharpener (for practice) on the ...Farberware knives I hadn't touched since I tried Henckels 4-star and Pro-S knives. These knives had been beaten up from throwing them in the dishwasher, and the Twinsharp put a very serviceable edge on the Farberware slicing knife; while not as effective or well-balanced as the Henckels knives, it *would* once again, smoothly and without fuss, cut through an onion. Be careful about the downward pressure you apply - a little more may be required at first, but a light pressure and smooth motion is required for the final finishing strokes, and you want to tilt the knife to keep the EDGE parallel to the countertop at the point the sharpener touches.

I then ran my 6-month old Henckels chef's knife, which was still pretty effective, though the sharpener. The knife cuts much more smoothly, and the sharpener eliminated any "dead spots" in the cutting edge. In addition, this sharpener smoothed out the three nicks that resulted when the knife slipped while I was washing it, bouncing off the drain of my stainless sink... if you look close you can still tell where they were, but the edge is greatly improved; a bit more use and a sharpening or two, and it should be visually impossible to tell the difference.

Just for kicks (and probably disobeying a few common-sense safety rules) I sharpened a dollar-store stainless pizza cutter, holding the sharpener to the floor with my boot and holding the cutter handle with one hand and rotating the blade (to simulate pulling a knife through) with the other. The cutter, which had previously been a pain ...and required a bit of pressure, cut right through a Tombstone pizza on the first pass.

I don't know if it will work for serrated knives, but for smooth-edged knives this sharpener seems very effective and easy to use - just hold the handle solidly against the counter and pull the knife through, keeping the cutting edge in good contact. The sharpener design and knife guides make it easy to hold the knife square in relation to the sharpening elements, resulting in a clean edge. The lefties are correct in their comments; this sharpener IS designed for a right-handed person, and there is no left-handed alternative available, but I found it to work very well for me.

Sharp Edge Quick & Easy4
Most of todays kitchen knives are hard stainless steel. Therefore, they fail to properly take an edge when in need of sharpening. At the factory, the first edge is ground in and unlike the directions say, that edge sooner or later requires touching up. The Henckels Twinsharp Knife Sharpener does just that. A few quick "pull thru's" and the blade is dressed no matter the level of steel blade hardness. So, if you are not a master of the sharpening steel and want to do fast and easy food prep. Then by all means consider the Twinsharp. It really works, but sooner than later you will need to find a way to get get you kitchen knives fully sharpened.

It does the job4
I don't have the best knives in the world...and they're quite old. They've only been sharpened once in 10 years. They were barely able to cut anything anymore. I thought I would invest in a modest sharpener just to see if this would sharpen before I needed to purchase new knives. All I can tell you is that you just need to hold the knife over an onion and it seems to melt right through. I don't know whether that just meant it honed the knife like the Amazon reviewer noted, but all my knives now are as sharp as they can be.

The Cutting Edge5
Perhaps the first reviewer had a defective knife because I can only give this inexpensive little knife the very highest recommendation. Initially, I had purchased a very (in my opinion) expensive electric knife ($65) which lasted all of, what? Two months? Yup, two months. Since I couldn't really afford to drop that kind of cash so soon again on an electric knife I got the Black & Decker EK700, not expecting it to last for very long because on average I bake at least a dozen loaves of bread a week, half of which are heavy wheat or rye breads.

As of today, February 28, 2008, I'm editing this review to make this comment: I used this knife for about a year before I posted my original review and it is STILL WORKING! Honestly, how can you beat that? I am really amazed at how sturdy it is. With the use I put it through I would have expected it to last no more than six months. But after all this time, with steady, hard use, it's running almost as well as the day I bought it. Great knife, unbelievably sturdy, easy to clean -- frankly, I can't think of anything bad to say about it. Highly recommended.

This is Electric Knife is Terrific!!!!!!5
I have always used electric knives to slice all the roasts which I cook, including, beef, pork, chicken and turkey. I have gotten tired of using knives and becoming dull, tearing the meat, and not working for more than 3 months. I bought this knife on the advise of the American Test Kitchens stating that this knife was one of the best. They are right. This is the best knife that I have used. I carved the Thanksgiving Day Turkey with it and it sliced that turkey like butter. No tearing or fighting with the blades to cut the meat. It fits in my hand like a glove, easy to run. I also like the safety switch on the on button. Push the slide button to the left,then press the on switch and it stays on until you release the on switch, when you are all done with the slicing, you press the slide button to the right and it locks the unit so it cannot be turn on. Blades go into the unit easily. Best little unit I have ever used. I would highly recommend this unit to anyone who uses an electric knife.

Pretty good for its purpose4
Arthritic hands make for difficult handling of tools. My former electric carving knife works just fine for spouse and grown children, but I was unable to keep it running long enough to make a cut. This implement allows me to depress and keep depressed the cutting trigger. I've carved some fairly tough meats and some very tender cuts. The knife has worked equally well for both. I haven't yet tried it on anything frozen. The blades are easy to attach and detach. They clean easily with a soapy sponge, and have survived the dishwasher well, too.

If I have any complaints, it would be that the knife is rather heavy and my hands tire easily when using it; being tied to a cord restricts its use to the preparation area, rather than the table; and (although I thoroughly understand the reason for it) having to hold down the trigger continuously is tiring. That third reason has no validity . . . if the knife is dropped, it doesn't need to keep cutting anything it comes in touch with!

All in all, this is a very satisfactory tool, especially for persons with problem hands.

More than just a celebrity endorsement, the Food Network's Alton Brown was instrumental in designing Alton's Angled knives for Shun. The quest for Alton Brown's perfect knife began when he first approached Shun to ask that his beloved Shun vegetable knife be altered slightly. The blade is made from VG-10 steel with a high carbon content for a higher density. Wow, it really works5
I was very suspicious of this guy, but having actually used it I can only recommend it.

We've had one in my house for quite some time. My mother bought it because she is not interested in learning the ins and outs of knife maintenance and read several great reviews of the 120.

I was suspicious, mainly from bad experience with cheezy knife sharpening gadgets, but also because my mom's knives, which had been through the Chef's Choice, always had crappy edges. I had made something of a habit of looking sideways at the Chef's Choice 120 on our kitchen counter.

I finally read one too many good reviews of this product (when I wasn't even looking for them, they just seem to pop up here and there if you read enough about cooking and cutlery), I decided to give it a shot on a Henckel's 5-star Santoku that had lost it's edge. I love the size and shape of a santoku, but it had gotten dull and was superceded by a Kasumi chef's knife I received as a gift. I figured the worst thing that could happen was that a knife I wasn't using would remain unusable.

First off, I Read The Freakin Manual. Do not underestimate the importance of this step. If I had just bought it based on good reviews and ripped open the box, I might have done this, but since I was already suspicious of it, I read through every word of their instructions. If you don't read the manual, the way you assume it works may be wrong (the big mistake might actually be overusing it). More on that later.

Next, before I turned it on, I did a few practice pulls with the power off. Get a feel for pulling the knife through smoothly and evenly. Make sure you keep the knife blade properly aligned with the wheel (i.e. if the knife you're sharpening has a curve, pull in a curve to keep proper contact with the sharpening wheels). Look at a clock, and make sure you're pulling at roughly the speed recommended for your knife's length.

Once I thought I knew how to use it, I made one pull through each side of stage 1. Felt the blade, as per the manual, and I had the burr they said I should feel for. Cool, it seemed to be working. I would recommend doing the burr check, because it does tell you that things are going according to plan. The same test is performed when knife sharpening is done by hand with a stone. After that, one pull on each side in the number 2 slot. Again, I had a burr, things seemed to be going well. Then I made 3 pairs of passes through stage 3, doing the left then right side, as recommended in the manual. Did a cutting test on some veggies. Wow, that thing was SHARP. Definately a better edge than you get from the factory on say, Henckle's or Wusthof's knives. I think my Shun and Kasumi knives were as sharp or sharper from the factory, but this was a nice, sharp, effortless, smooth-cutting edge, and it was equally sharp along the whole length. It's theoretically possible to get a sharper edge, but practically there is nothing left to desire from the edges I get from the Chef's choice, and I will happily be putting that knife back to regular use.

I asked my mom to have a go with the knife, and she was amazed at the edge I got from the same device she'd been using on her knives. It turns out she wasn't using it as recommended by the instructions. For example, she was making multiple pulls on the same side of the knife (you're supposed to alternate, left and then right side), and probably making too many passes. I redid the edges on all our knives, and now they are just awesome. I do feel like I got slightly better results the second and third time I used the machine. Splitting hairs, but it's safe to say it gets better as you get the hang of it. As other reviewers have said, the best thing would be to practice on something inexpensive or throw-away to be absolutely safe. I didn't really have anything that fit that bill, so I just jumped in with a good knife.

So, bottom line is this sharpener can do a very good job, but it's a tool. Like any tool, it needs to be used properly. It may be electric, and it may be a lot easier and faster than a whetstone, but it doesn't have a brain. That's what you're for, so read the manual, make some practice pulls with the power off, sharpen a cheap knife first if you can, and then enjoy. Don't worry about a reviewer who says the thing jams if you try to push the knife against the wheels and thus doesn't sharpen the knife. The manual says not to do that, just use enough pressure to make contact with the wheels.

A Great Sharpener5
I have had this model for some time now, and it has preformed without flaw. This particular model (#120) was highly rated in the last issue of Fine Cooking. There is very little metal loss and the edge is far better than a factory one. I think so much of this that I am buying another one for a birthday gift. You will not be disappointed.

A Useful Kitchen Tool That Could Be Better3
I currently own the professional Chef's Choice model (which I highly recommend, by the way), but previously used this model made for home kitchens (don't let the word "professional" in Amazon's description of this model's title fool you--it's just a gimmick, there is a real professional quality Chef's Choice electric sharpener).

I purchased a Chef's Choice after reading good things about this electric sharpener in "Cooks Illustrated" magazine. It definitely made a world of difference. I was starting with good knifes--Wustof Trident and Henckels--which may have something to do with my success, but the Chef's Choice really does make home sharpening possible, and easy, in my experience. When a knife seems dulls I run it through the whole sharpening process (once every 4-6 months with a high quality knife that gets a fair amount of use), but to keep my knives constantly razor sharp--which is what I really love about the Chef's Choice--I just run them through the second stage a few times as soon as they're washed. That way they're always ready to use.

My only negatives would be ... 1) That I've had no luck sharpening serrated knives (like a bread knife), which the Chef's Choice claims is can do. Because serrated knives hold their edge a LOT longer than other knives, this isn't a major concern for me. To sharpen your serrated knives I suggest taking them to a professional--look under "knife sharpening" or "cutlery" in the yellow pages. It only needs to be done once a year or so and most will do it while you wait for around $3-$5 per knife. 2) My second caveat for the chef's choice is that the "third" stage on this model has little or no effect as far as I can tell. 3) Also, the motor in this model, is a little chintzy, when compared with the far more substantial professional model, which only has two stages by the way. For the money, it should really last longer than three and half years--which is how long by old one ran before conking out.

I bake bread on the average of three times a week. With my old bread knife I could never slice the bread while it was still hot because it would just mash it down and the dough would stick from crust-to-crust. This baby slices right through the bread hot out of the machine like a hot knife through butter. Good quality for what you pay for.5
I got this (and the set of synergy knives -- different product) for my mom as a gift. If you can spend the money to get the twin series or better with Henckels, then go for it, but the Synergy line is a great second-rate knife that Henckels makes, as long as you avoid putting them in the dishwasher. I really don't know why they bother using "dishwasher-safe*" as a selling point, since they don't recommend it in the first place.

The blades will keep their sharpness, and the molded handles, even though they're made of plastic, are dense and have some good heft to them, which I like in my knives.

perfect...especially for the novice.5
First, I preface my review by stating I am not a professional chef, nor am I a very experienced cook, but in fact I am a novice who enjoys learning to cook. My parents have the entire set of the same Henckels International Classic set and thus this is the only set I had ever really used for most of my short cooking life. I presumed all knives were like this and this is the norm. Well, I recently moved and also recently had been cooking at friends and family's houses who don't have this set of knives...well let me just say, I now know the importance of a good set of knives. The knives cut cleanly and easily, leaving clumsy people like myself less opportunity to injure themselves. So, one of my first purchases in my own place was of course the same set of Henkels International Classic knives that I had "grown up on." (The store near me didn't have a complete set, so I bought this little paring knife essentially to complete the set.)

I should also say that in choosing a set of knives, I called the Henkels company to ask about the difference between this set and the Henkel Pro or 4 star. I was told that the difference is in the weight and that this set is a little lighter than the pro and also that this set is designed in Germany but built in Spain. The staff was very friendly and told me honestly that unless I was a professional chef or professional cook that I really did not need to spend almost double the money on the pro and that the international set would be quite sufficient and perhaps even more appropriate.

I would recommend this set and this company to anyone and everyone especially the novice...because good and safe cooking starts with a good set of knives.
BTW I don't compliment companies easily.

Affordable quality5
Henckels is known for making quality knives and that quality is even evident in this less expensive line of knives. I always hesitated to spend $20-$30 on a paring knife, but no more! I have been using this knife daily for nearly two years. I have others, but always pull this one out. The size is perfect and it's easy to handle. The notch formed into the end of the handle keeps it from slipping out of your hand, especially when working in water in the sink. Occassional sharpening keeps it like new.

My new favorite knife!!5
This knife was bought for me by my husband from my wish list for Christmas to replace my old Henckels that accidentally got broken (trust me it took alot!) It is much heftier than the old one and took a few uses to get used to, but this knife is GREAT and for the price, just can't be beat. I'm one to take my knife with me when I travel, as I tend to cut myself when using "foreign" (Inlaw's) knives. So this one will be now travelling with me every summer and of course is my "daily driver"!!

Smaller Size is Perfect Fit4
After reading some un-favorable reviews, I was a little hesitant to purchase this item. My need for knife protection, in a drawer that I wasn't ready to give up half the space to one of the larger trays on the market to, nudged me in the right direction. I've had one of these in constant use for four years now and it fulfills its reason for being admirably. It is totally utilitarian and keeps my valued, Wusthof, Global and Henckels, knives organized, out of sight,protected and instantly accessable without taking up the whole drawer or using up valuable counter space as larger 'made mostly for show' blocks would. If you're looking for something simple and in its own way elegant this should serve you well for a long time. If you have more knives than this will hold or if you have lots of counter space to waste get something larger. That's just my opinion. I could be wrong.

Overall I liked this case. It is well made, easy to use and handy. My only complaint is I wish there were a little more space between each knife "pocket". You really need to be careful as larger (chef, etc) knifes end up being close to each other. And if you go to pull one out, you want to really watch what your doing or you could cut yourself on the knife next to it.

If you have 7-8 knifes you might want to get a bigger size and leave some of them empty.

I have been using this paring knife for over 50 years. My mom and dad had one, and I now have one. Chicago cutlery is the best value in knives. This paring knife is perfectly balanced and just the right shape and length. I would never use any other paring knife. I bought a high end paring knife, and it broke with in a year. Could have bought 10 of these for the same price.

This is a very nice knife. It is comfortable to use and the wood is beautiful. Just be sure to hand wash to keep the wood in good shape.

Sharp5
Well, it is Chicago Cutlery, so sharp is what you get!! I love the traditional edges on these and have never been a fan of serrated edges except for my steak knives. Due to the natural wood, you need to keep the handles oiled or they will dry out. They hold an edge very well, but keep your rattail handy for when it burrs down. Overall, very happy with this product.

Okay, but...3
Having never purchased a knife case like this before, I have no concrete basis for my rating. However, in the few months I've owned the case, I can say that there just HAS to be a better way to carry your knives around. This one doesn't seem to hold them securely enough, as they occasionally "rattle" during transport (and, if you're not careful, they could fall out of the case). It's serviceable, but I expected more.

I've had my knife case for almost 12 years now, and it still keeps up with the abuse that comes with my profession as a chef. It was given to me by the knife sharpening guy as a thank you gift for the business, i had given him. Day in night out, it has been reliable, and worn well (even though it looks as good now as it did then)This case keeps my babies, (yes i said babies) save and sound, everyone has become accustomed to seeing me with my knife bag, where i go, they go, and even though i've had my henckel 4 stars for much longer, the case still gives them the ohhhs and awwes, from being protected. A bit of background information if you are unfamiliar with ceramic knives. There are basically three types of knives you can purchase:

1) High stainless steel knives - Fairly sharp, hold their edge well, somewhat difficult to sharpen. These are the knives that you are most likely to purchase at a store. Prices range from very cheap to very expensive (I own a Wusthof set, so I know how expensive they can get).

2) High carbon steel knives - Very sharp, dull easily, easy to sharpen. These are the cheapest, easiest to sharpen, and lose their edge the fastest. These also tend to be used by professionals (I managed over 80 "knife hands" early in my career and this is all we used - people would dull on average 6 per day).

3) Ceramic knives - Supremely sharp, hold their edge practically forever, impossible to sharpen. Expensive, and prone to breaking if not used properly.

Most people purchase high stainless steel knife sets, and these are adequate for general utility. But it's not the best strategy for a well prepared chef to follow. The best approach is to have multiple knives and use them for specialized purposes.

Here's what you should do:

1) Buy this ceramic set. Use it for everything except boning. Under no circumstances should you ever use it for boning, as you will likely chip the blade (i.e no knife work that requires any prying or side-to-side motion). Hand wash, and don't drop on your tile floor. They will last you forever and you will wonder why you ever used anything else. (I've owned a 5" ceramic utility for almost 10 years and it still hasn't required sharpening).

2) Go to your local restaurant supply store and buy at several 6" high carbon steel boning knives. They are generally very cheap, and very cheap looking. Use these knives for general cutting and boning. Sharpen them frequently (a quick run over a steel after every use is best).

If you follow this strategy you will be amazed at what you can do with the ceramics, and you will also have the best (and cheapest) boning knives to decrease the chance that you'll ever chip one of your ceramics.

Sharp stuff!5
These knives took a little getting used to at first. They just have a different "feel" than my high-end steel knives. At first I thought I might cut myself but you get used to them quickly. It's almost spooky how easily they glide through food. You can make tomato slices so thin you can almost see through them! They are almost all I use - I'll wash and re-use my ceramic knives before going to the rack for a steel one. My only problem is my wife and squabble over who gets them when we are cooking together...

Sharp doesn't even begin to describe the edge5
Be very, very careful. These are the sharpest knives I have ever dealt with. I have used it for fish, vegetables, boneless meats, and cheeses. You can make cuts as thin as you want, and the consistency of the cut is amazing. This set is a good introduction, and I am so happy with it that I plan on getting some of the other knives over time. The knives cut well and are very easy to clean...what else could you want?

Gets the Job Done5
I ordered this for my fiance and he loves it. He has sharpened every knife in our house and at his parents. It doesn't look like much, but it definitely puts a sharp edge on any blade.

I ordered this particular one because it is sort of an all purpose, everday sharpener but even though it is only rated fine it still removes small nicks. We are going to buy the DMT ceramic extra-fine sharpener (white handle) too, so he can refine the edges even more.

This was kind of a throw away gift that turned into the best christmas gift of the year for him. I couldn't find any reviews for this product anywhere else, so I hope that this one is helpful.

I've had this thing for many years now. When you're on the fly and don't have time to break out the stone to "sharpen" your knife, open this thing up, and perform a quick "hone" to realign the blade edge. Notice the difference. When it comes to pocket knives, I can sharpen them up pretty good with a dual composite stone. I also have a longer steel for the kitchen knives which I utilize to hone prior to each use. If the knife is of good quality, I'll take it in for professional sharpening. There is a big difference between sharpening and honing. Sharpening remakes the blade's edge. Honing takes that edges imperfections out or realigns the folded over or flat spots. Pull any knife out of your kitcnen drawer, look straight on at the edge, and you'll see light reflecting off of the imperfections, unless you hone prior to putting it away. My opinion, knives banging against each other in a drawer messes them up. That's why I hone prior to use.

Victorinox Beats Wenger In Quality5

I am somewhat of an unqualified expert on the Victorinox Swiss Army Knives, I currently own 4 of them, and one Wenger Executive. If you are going back and forth debating which is better, in my experience the Victorinox is superior in blade quality and construction. The Wenger knives have more "wiggle" in the blade and just don't feel as solid.

The Silver Alox Soldier is a fine looking knife. I really prefer the look and style to any other Swiss Army red or black. It feels heavier, and the handle material isn't going to chip or crack. Good enough to put in your back or front pocket without being too heavy, and a nice mix of tools. I also have the Silver Alox Harvester, which is the same knife with a sawblade added. You wouldn't think it would make much of a difference, but the Soldier is noticeably lighter in your pocket, so if weight is a big deal for you and you can sacrafice the sawblade, this knife would be ideal for you.

Best Swiss Army Knife Ever Made5
In my opinion, this is the best Swiss Army knife ever made. It is the sturdiest of all the knives, and has only the necessary tools. Perfect for camping/backpacking, and as a gift to friends and family.


PROS:

-The knife blade is longer and thicker (sturdier) than the knife blades on other Swiss Army knife models.
-Aluminum Handles. The classic red plastic handles on the other models will eventually crack and fall off after a few years of regular use. The aluminum sides on this knife will never break, and they offer superior grip.
-Compact and Lightweight.
-It's the official army knife of Swiss soldiers, so it must be good!


CONS:

1. The reamer may not be very useful for many people. However, it has many other uses if you get creative.

Another absolute gem5
I bought this knife to replace an older one that I "lost" at an airport security check (forgot to empty that pocket at home.)

It appears to be exactly the same knife as the Swiss Army Pioneer Pocket Knife, which I also bought ("just to see..."), except that this one has a key ring.

They are both absolute gems, each has a small variety of tools that are extremely useful and is not overloaded with "fun" stuff that just add to the weight and awkwardness. The metal is hard & sturdy enough that you can really do some prying without damaging the blades, the knife blade is sharp and will hopefully stay that way for a while (good metal), the can-opener works well, the shape of the small screwdriver lets you wriggle it into the smallest of openings to do the pry thing, and the blade remains un-nicked so continues to work well as a screwdriver afterward.
Also, the handle is metal, not plastic, so I can carry it (for years?) in the same pocket with my keys, with no chipping or loosening of the side plates. A very good design! and I'm grateful that the Company continues to make such a useful piece, when they undoubtedly earn a lot more profit from the big, fancy, multi-mega-bladed tools - which may be good in a toolbox, but not in a pocket!

Protect your knifes!5
I'll do this one review on all the sizes of KnifeSafes.

I love these things! They're such a great idea. I'm convinced that a lot of people don't give a lot of thought to their kitchen tools. If they did, they would want to use and protect them better. Here's my reasoning behind the KnifeSafe.

Storing knives in the kitchen go something like this. Store knives in a slotted knife block. That block gets dust, moisture, and other debris in it and you won't be able to get it out. They're OK, though. Alternative storage can be as simple as hanging on magnets (if you don't mind magnetized blades). The drawer is probably the most common storage method and I've seen a lot of drawers full of knives, all sitting there next to each other. The problem is that the edges hit other metal and dull. The edges also cut hands in the drawer. Both situations are bad.

Furthermore, for those of us who transport knives to and from events, protection FROM the edge is a must. Our options are homemade sheaths life rolled magazines, flat plastic sleeves, or KnifeSafes. The rolled magazine thing is just asking for trouble. The plastic sleeves are alright but here's the difference...

Flat sleeves contact almost the entire surface of the blade. Worse yet is that the knife rests in it, sitting on its edge. The worst thing is the knife is held in, only by the elastic grip of the sleeve. I've reached for a knife in a bag to find its edge exposed!

The KnifeSafe contacts the blace only by the four rubber pieces that you can see in the picture (two adjacent pair). Not only is the surface only touched by those rubber pieces, the edge is contact free. The clam-shell like contruction snaps around the blade to the other side. The opening is not as wide as the case, so some knives won't even slip out if you can get them to slide in the rubber. I could barely pull a thin paring knife out of the KnifeSafe, so I'm not surprised that I haven't had one slip out.

In the end, I would recommend the KnifeSafe for anyone storing knives in a drawer or anyone who transports (or may transport) blades to and from events. Dinged blades and cut hands are just not worth it when you can spend a few bucks and prevent all the trouble.

Great knife protectors!4
These knife protectors do a great job of protecting knife blades in a drawer, and also protecting fingers from sharp blades. It takes a bit to get used to releasing the clasps that hold them closed and also hooking them closed, but overall they hold the knives securely. It would be nice if Amazon offered them individually so sizes needed could be bought individually as needed. I found them here at prices that are competitive, http://www.sharpeningsupplies.com/BladeSafe-Knife-Protectors-P111C59.aspx, and you can purchase only the sizes needed.

The only complaint that I might have about these protectors is the space they require in a drawer. If you have a few knives, these protectors are thick and take more space than a sleeve protector.
